Cream of Asparagus Soup

(ph Miracle/Rbt. Young)

2 TBS. olive oil
1/3 yellow onion, chopped
2 garlic cloves
1 bunch organic asparagus, chopped
3 1/2 cupps vegetable broth, organic
6 oz. coconut cream, organic
2 tsp. salt
1 1/2 tsp. dill
1/2 tsp. fresh lemon peel, grated
2 TBS. lemon juice

Process or blend all.

  1. I thought this was good the first time...but didn't care for it so much the next day. This is one dish I wouldn't miss if we didn't do again.

  2. i found it to be too much brassica or something although i will try it on my own again at some point and blend in avacado or coconut oil to buffer the brassy taste and see if that works next time..
